These casings a bit on the expensive side but well worth the extra money. Although they were listed for hot dogs I just made the most wonderful Italian sausage with these casings seasoned them, add chopped fresh parsley and high temp pepper jack cheese. I gently poached them and added about a tsp. or two of oil in the poaching water so when the water was completely evaporated the oil still remained and allowed them to be gently brown on all sides. They were absolutely the best and most tender sausage I ever had. Go for the extra cost you won't be sorry.
