How Healthy Is Venison?
While doing research for an article of my own, I had come across a table for caloric comparison in a popular cookbook which stated venison was higher in carbohydrates, fats, and calories. I couldn't believe that...not with a couple decades of hunting, processing, cooking, and consuming experience. A search through Google led me to your article and reassured both my grub provider and 'Mommy' instincts. I have chosen to eat venison for many years, and momentarily panicked when I considered the mistaken information previously found. I chose venison not only for the lean meat, but lack of hormones, the hunting experiences for our family, the handy hides, and the interesting things I've learned to do with hooves, dew claws, bones, and a Dremel tool.
