Great kit ! I used 6.5 pounds of venison 3.5 pounds of 70/30 beef instead of pork. added 1 pound of cheddar cheese to the mix and refrigerated over night to let the spices blend. 1/2 i did in the oven the rest in the smoker both are excellent.
