The "Genoa Sack" is a beef middle lined hog bung that is used exclusively for natural casing Genoa salami. Because of the unique way in which this casing is made it has added strength and does not break easily. The casing itself is 20" long and will stuff about 5 to 5 1/4 pounds of meat.
